Creamy Spaghetti with Clam Sauce



Creamy Spaghetti with Clam Sauce
Serves 2–3 | Ready in ~20 min

Ingredients:

  • 8 oz spaghetti
  • 1 can Bar Harbor Foods® chopped surf clams, drained
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup dry white wine or clam juice
  • 1/2 cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Cook spaghetti according to package directions; reserve 1/4 cup pasta water.
  2. In a skillet, melt butter over medium heat. Sauté garlic (and red pepper) until fragrant, ~1 min.
  3. Add clams and wine (or clam juice). Simmer 2–3 min.
  4. Stir in cream and simmer until slightly thickened, ~2 min.
  5. Toss in cooked spaghetti, adding reserved pasta water as needed to reach desired sauce consistency. Season with salt, pepper, and parsley.
  6. Serve with lemon wedges for a bright, fresh finish.
