Creamy Spaghetti with Clam Sauce
Serves 2–3 | Ready in ~20 min
Ingredients:
- 8 oz spaghetti
- 1 can Bar Harbor Foods® chopped surf clams, drained
- 2 tbsp butter
- 2 garlic cloves, minced
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup dry white wine or clam juice
- 1/2 cup heavy cream
- 2 tbsp fresh parsley, chopped
- Salt & pepper, to taste
- Lemon wedges, for serving
Instructions:
- Cook spaghetti according to package directions; reserve 1/4 cup pasta water.
- In a skillet, melt butter over medium heat. Sauté garlic (and red pepper) until fragrant, ~1 min.
- Add clams and wine (or clam juice). Simmer 2–3 min.
- Stir in cream and simmer until slightly thickened, ~2 min.
- Toss in cooked spaghetti, adding reserved pasta water as needed to reach desired sauce consistency. Season with salt, pepper, and parsley.
- Serve with lemon wedges for a bright, fresh finish.
