We hope summer has made an appearance in your area; it showed up with a bang up here in far eastern Downeast Maine last weekend. It was so warm, our family spent two days at the beach! Usually an event that doesn’t happen this early, and we’re not complaining.
One afternoon we got home tired, sunburned and starving. Sandwiches seemed the shortest route to un-hungry and the simplest food. Little did we know that we were about to create the most amazing sandwich we’d ever had.
I think almost everyone has had tuna sandwiches at some point, so we thought maybe that was the answer. But that didn’t seem like it would give us the foodie-licious flavor we wanted [we’ve been having a lot of conversations lately about trying to break out of the winter food rut]. Then we remembered we had some Bar Harbor Foods® Wild Smoked Alaskan Salmon Fillets in the pantry.

And right next to the salmon was a huge jar of Hot Spicy Maple Bourbon pickles. Eureka! What happened next was absolutely epic…a flavor profile that was downright shocking it was so good. Lightly smoked salmon, sweet hot pickles and tangy dressing….
So here’s the extremely simple recipe that will delight anyone that loves smoked salmon, and easy enough that anyone can make it for a super special Mother’s Day lunch.
SMOKED SALMON SANDWICH
Ingredients
2 cans Bar Harbor Foods® Wild Smoked Alaskan Salmon Fillets
10-12 slices of Hot Spicy Maple Bourbon pickles, chopped [ours came sliced already, and we chopped the slices]
One stalk of celery, chopped
1/4 cup Ranch dressing
Drain the salmon and mix it with the other ingredients. Serve it on your favorite bread and use spinach leaves instead of lettuce. Yum!
