Clam and Kale Soup

Warm up your winter with this delicious Clam & Kale Soup! 🍲✨ After indulging in all the rich holiday treats, it’s time to nourish your body with something hearty yet healthy.

Here’s what you’ll need:

– 1 tablespoon olive oil

– 1-1/2 cups finely chopped onion

– 1/2 cup finely chopped celery

– 1/2 cup finely chopped carrot

– 1 teaspoon minced garlic

– 1 teaspoon dried thyme

– 1 teaspoon paprika [use smoked if you like that flavor profile, we do!]

– 1/2 teaspoon ground black pepper

– pinch crushed red pepper

– 2-1/2 cups chopped fresh kale

– 1 cup water

– 2 (8 ounce) Bar Harbor® Clam Juice

– 3 (6.5 ounce) cans Bar Harbor Foods® Whole Gourmet Ocean Clams

– 2 tablespoons finely chopped fresh cilantro

– 1/4 cup finely chopped fresh parsley

Instructions:

1. Heat olive oil in a soup pot. Add onion, celery, carrot, garlic, thyme, paprika, black pepper, and red pepper; cook until softened.

2. Stir in kale and coat with seasonings.

3. Add water and clam juice, cover and cook for 10 minutes.

4. Mix in clams, cilantro, and parsley; heat through.

5. Serve in bowls and enjoy! Leftovers can be refrigerated for two days or frozen for up to three months.
