Indian Pudding with Crème Anglaise

What the heck is Indian Pudding you’re probably saying to yourself. Most likely if you haven’t lived in New England it is a real mystery for sure.

Traditionally, Indian pudding is a baked custard with milk, butter, molasses, eggs, spices, and cornmeal. The name is likely derived from the cornmeal, which was known as Indian meal in the New England area. It is similar to the traditional English dish hasty pudding. Printed references to hasty pudding in England date to 1599, while Indian pudding recipes start appearing in American cookbooks in 1796.

Now you’re probably thinking that making a recipe like this from scratch could be tricky (as we all know puddings can be!) and take a lot of time. Well, we’ve taken the tricky and the time out of it with our Look’s Atlantic Indian Pudding product.

Perfection is achieved not when there is nothing more to add but when there is not much left to take away.

Bar Harbor® Indian Pudding with Crème Anglaise

Here is an easy and delicious dessert idea from our cookbook archives:

Ingredients:

1 cup heavy cream
2 teaspoons vanilla extract
4 egg yolks
1/3 cup white sugar
(1) 15.5 oz. can Atlantic® Indian Pudding

Instructions:

In a small, heavy saucepan, heat cream and vanilla until bubbles form at edges. While cream is heating, whisk together egg yolks and sugar until smooth. Slowly pour 1/2 cup of hot milk mixture into egg yolks, whisking constantly.

Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Continue to cook, stirring constantly, until the mixture coats the back of a spoon. Sauce can be served warm or chilled.

Remove the Indian Pudding from the can by running a table knife around the edge of the product to remove in a solid column. Slice pudding in half-inch slices.

Melt butter in a non-stick pan at medium heat, adding the sliced pudding rounds to pan. Heat thoroughly, turning once. Cut each pudding slice into four pieces and arrange in individual serving dishes. Top with warm or chilled Crème Anglaise Sauce. Enjoy!

Serves 6.

Recipe Shortcut: To make things even simpler, you could use whipped cream as an equally delicious topping.
