SuperFood Side Dish

Here’s a quick side dish [or complete meal if you choose] loaded with protein, low in fat and bursting with flavor! Our canned smoked kippers make preparation a breeze.

Ingredients:

2 cans of Bar Harbor® All Natural Smoked Kippers
1 teaspoon sea salt
1/4 teaspoon ground cumin
1/4 teaspoon ground black pepper
2 cups quinoa or brown rice
1/2 cup chopped pistachios
1/4 cup finely chopped fresh mint
1/4 cup finely chopped fresh parsley
Freshly grated lime zest, as needed

Instructions:

Put 1 and 1/2 cups of water, the salt, cumin and pepper in a small pot and bring to a boil. Cook the quinoa or brown rice according to the package and then transfer to a bowl. Fluff with a fork and then add the pistachios, mint, parsley and lime zest to taste. Top with Bar Harbor® All Natural Smoked Kippers. Serves 4.
