Ingredients:
- 1 can Bar Harbor Foods® chopped clams, drained
- 1/2 lb ground white fish or shrimp (optional for extra texture)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan
- 1 egg
- 2 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- Zest of 1 lemon
- Salt & pepper, to taste
- 2 tbsp olive oil
For the creamy sauce:
- 1 tbsp butter
- 1 garlic clove, minced
- 1/2 cup dry white wine or clam juice
- 3/4 cup heavy cream
- 1/4 cup crumbled feta
- 1 tbsp lemon juice
- Fresh parsley for garnish
Instructions:
- Make the meatballs: In a bowl, mix clams, fish/shrimp (if using), breadcrumbs, Parmesan, egg, garlic, herbs, lemon zest, salt, and pepper. Form into 12 small meatballs.
- Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, ~5 min. Remove and set aside.
- Make the sauce: In the same skillet, melt butter, sauté garlic 1 min. Add wine/clam juice, reduce 2-3 min. Stir in cream, feta, and lemon juice. Simmer until slightly thickened.
- Return meatballs to the skillet, coat with sauce, heat through 2-3 min.
- Garnish with parsley and serve over creamy polenta, pasta, or with crusty bread.
