Clam & Herb Creamy Meatballs with Lemon & Feta

Serves: 4

Ingredients:

  • 1 can Bar Harbor Foods® chopped clams, drained
  • 1/2 lb ground white fish or shrimp (optional for extra texture)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 egg
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • Zest of 1 lemon
  • Salt & pepper, to taste
  • 2 tbsp olive oil

For the creamy sauce:

  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1/2 cup dry white wine or clam juice
  • 3/4 cup heavy cream
  • 1/4 cup crumbled feta
  • 1 tbsp lemon juice
  • Fresh parsley for garnish

Instructions:

  1. Make the meatballs: In a bowl, mix clams, fish/shrimp (if using), breadcrumbs, Parmesan, egg, garlic, herbs, lemon zest, salt, and pepper. Form into 12 small meatballs.
  2. Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, ~5 min. Remove and set aside.
  3. Make the sauce: In the same skillet, melt butter, sauté garlic 1 min. Add wine/clam juice, reduce 2-3 min. Stir in cream, feta, and lemon juice. Simmer until slightly thickened.
  4. Return meatballs to the skillet, coat with sauce, heat through 2-3 min.
  5. Garnish with parsley and serve over creamy polenta, pasta, or with crusty bread.
