Spicy Garlic Clams on Toast

🌶️ Spicy Garlic Clams on Toast (Serves 2)

🛒 Ingredients:

1 can (6.5 oz) Bar Harbor Foods® chopped surf clams, drained (reserve a little clam juice)

3 slices of crusty bread (sourdough or ciabatta works best)

2 tbsp olive oil

3 garlic cloves, finely chopped

1/4 tsp red pepper flakes (adjust to taste)

1/2 tsp smoked paprika (optional, but 🔥)

Zest of 1/2 lemon + juice

Salt & pepper to taste

Chopped fresh parsley (or green onions) for garnish

🧑‍🍳 Directions:

Toast the Bread

Lightly drizzle bread with olive oil and toast until golden and crispy (use a toaster, oven, or skillet). Sauté Garlic & Spice

In a skillet, heat 2 tbsp olive oil over medium heat. Add garlic and red pepper flakes. Sauté for 1 minute until fragrant but not browned. Add the drained clams and a splash (1–2 tbsp) of reserved clam juice. Stir in smoked paprika and lemon zest. Cook for 2–3 minutes until heated through and slightly thickened. Season with salt and pepper.

Finish with Citrus

Remove from heat, squeeze in lemon juice, and stir. Spoon clam mixture over the toasted bread. Sprinkle with olive oil, parsley and maybe a pinch more chili flakes (if you’re bold).

💡 Pro Tip: Top with a poached or soft-boiled egg for brunch-level magic. Or add a splash of white wine during the sauté for extra depth.
